Online summer course to focus on vegan diet, provide recipes
The Oakland University School of Nursing will offer "A Lifestyle Change to Improve Health: The Vegan Diet," an online course beginning Monday, May 27, and running for seven weeks. Taught by Marilyn Mouradjian, MSN, RN – Oakland University nursing instructor and a practicing vegan – the course will focus on the health benefits of a vegan diet and provide a variety of tasty vegan recipes.
Through self-study modules provided once a week, participants will learn how poor choices in lifestyle and diet can impact and promote chronic illnesses, as well as how a vegan diet can lead to weight reduction, increased energy levels and better health. The course has been bestowed a PETA Compassionate Campus Award.
Anyone interested in learning more about this culinary alternative to improving diet and lifestyle can enroll. Benefits include discovering a wide variety of foods and menus that often eliminate reliance on prescription drugs.
"Our culture relies heavily on pharmaceuticals that often have serious side effects, which can prompt additional medication use to reduce those side effects. The vegan diet scientifically addresses the prevention and reversal of many chronic health conditions," Mouradjian said.
Since its inception, the vegan experience has attracted a growing number of followers from throughout the U.S. and countries around the world, including Canada, Germany, New Zealand and the U.K. Mouradjian explains that having this cultural diversity broadens the variety of meal options that vegans enjoy. In fact, a vegan lifestyle can significantly broaden dietary repertoires rather than restrict them.
